Cappadocia is in central Anatolia, 730km southeast of Istanbul. The domestic flight to Kayseri (ASR) takes approximately 1.5 hours from Istanbul Sabiha Gökçen (SAW) or Istanbul (IST); transfer to Göreme by shuttle or taxi takes approximately one hour. Total door-to-door: three hours. Turkish Airlines, Pegasus, and SunExpress fly the route; multiple daily departures mean a post-marathon morning departure is practical.
The landscape is the consequence of three million years of volcanic activity followed by erosion: the Erciyes, Hasandağ, and Güllüdağ volcanoes deposited tuff (compressed volcanic ash) across the region in geological layers that eroded at different rates, leaving the formations called fairy chimneys - columns of soft rock capped by harder stone. Human occupation has carved into this material continuously since the Bronze Age: cave churches, carved monasteries, and underground cities that at Derinkuyu descend to eight levels below the surface.
November in Cappadocia: The summer volume of visitors (the region received 3.5 million in 2023) reduces substantially. November is cold at night - 2--5°C before dawn, when balloons fly - and mild by day at 10--15°C. The valleys are rust and ochre in the autumn light. Hot air balloon flights operate most mornings from late September through November, subject to wind; the November cancellation rate due to weather is higher than summer but the flights that run operate in clearer air with longer visibility.
Getting There
Flight: Book Istanbul SAW to Kayseri ASR with Pegasus for the best combination of schedule and price. SunExpress also flies the route. Turkish Airlines connects via Istanbul IST.
Transfer to Göreme: Göreme Shuttle (göremeshuttle.com) operates a fixed-price transfer from Kayseri airport to Göreme hotels (approximately 350--400 TL per person, shared; 1,500--1,800 TL private). Pre-book: the transfer desk at Kayseri airport can be disorganised and taxis at non-reserved price are approximately double. Journey time approximately 60--75 minutes on the Nevşehir road.
Night One and Two: Settling In
Göreme is the primary base: a small town in the Göreme Valley with the highest concentration of cave hotels, restaurants, and tour operators. The Open Air Museum is a 15-minute walk uphill from the town centre.
Cave hotels are the correct choice here. Several are carved directly into the tuff formations; rooms have stone walls, irregular ceilings, and temperatures that buffer against the cold nights through thermal mass. Anatolian Houses and Museum Hotel are the top-tier options; Cave Life Hotel and Kelebek Heritage Cave Hotel are well-regarded mid-range. Book directly and confirm November operation - some hotels reduce staffing or close rooms in low season.
Hot Air Balloon
The balloon flight over Cappadocia at dawn is one of the most photographed experiences in Turkey for good reason: the formations read entirely differently from 300 metres than from ground level, and the flight in calm morning air over a silent landscape is genuinely unlike other experiences available at this geographical scale.
Book in advance. Reputable operators in November: Butterfly Balloons, Royal Balloon, Türkiye Balloons. Prices approximately 200--250 EUR per person. The rate includes hotel pick-up at approximately 05:00--05:30 (before dawn), inflation and pre-flight briefing, approximately one hour of flight time, landing in a field, champagne toast on landing, and a certificate. Do not book through third-party aggregators at lower prices - the safety record of budget operators in Cappadocia is not uniform.
Cancellation: Balloon flights are weather-dependent. If wind speed exceeds approximately 35km/h at altitude, flights are cancelled on the morning. Reputable operators refund in full or rebook; build a contingency day into a four-night stay.
Night Three: Derinkuyu
Hire a car from Göreme (multiple rental offices on the main square) or book a guided day tour that covers the underground city and the Ihlara Valley. A day tour by car from Göreme costs approximately 1,500--2,000 TL for a driver-guide and private vehicle.
Derinkuyu Underground City (Yeraltı Şehri): the deepest of Cappadocia's underground cities, descending eight levels below the surface. Carved from the soft tuff by early Christian communities from the Byzantine period; the city sheltered thousands and contained wine cellars, stables, churches, and ventilation shafts. Entry approximately 200 TL. The internal passages are low and narrow; not suitable for those with claustrophobia. Allow two hours minimum.
Ihlara Valley: a 16km canyon carved by the Melendiz River into the basalt plateau, with Byzantine cave churches (many with frescoes intact) carved into the canyon walls. The valley walk from Ihlara village to Selime (8km on a mostly flat trail alongside the river) passes the Ağaçaltı Church, the Kokar Church, and the Eğritaş Church - all carved directly into the canyon face, accessible via wooden ladders. Selime Monastery at the end of the valley is the largest rock-carved ecclesiastical structure in Anatolia. Allow four hours for the full walk. Return by taxi from Selime (approximately 400 TL) or continue to Aksaray for the bus back to Göreme.
Night Four: Valleys and Viewpoints
Göreme's surrounding valleys are walkable without a vehicle. The Rose Valley (Kızılçukur) and Love Valley (Güvercinlik Vadisi) are accessible on foot from the Göreme town centre; the walk through the Rose Valley to Çavuşin takes approximately two hours on marked trails with minimal gradient.
Göreme Open Air Museum: a UNESCO site comprising a monastery complex of cave churches from the 10th--13th centuries, with frescoes in near-original condition. The Dark Church (Karanlık Kilise) is separately ticketed and preserves the most complete fresco cycle. Entry approximately 500 TL, Dark Church approximately 200 TL. Allow two hours; wear walking shoes (uneven surfaces throughout).
Uçhisar Castle: a 60-metre natural rock formation carved with cave rooms and passages, offering the widest panoramic view in Cappadocia. 15 minutes from Göreme by dolmuş. Entry approximately 150 TL.
Avanos: a town 8km from Göreme on the Kızılırmak River known for its red clay pottery tradition. Pottery workshops open to visitors (approximately 300 TL for a hands-on session); the old town quarter along the river is photogenic and uncrowded in November.
Getting Back
Transfer from Göreme to Kayseri ASR by shuttle (book return with the same operator that delivered you). Flight back to Istanbul IST or SAW. From Istanbul SAW, a Havataş bus connects to Kadıköy or Taksim; from IST, the metro runs to the city centre.
